The summer vegetable harvests have slowed down considerably here, and I must say we have mixed emotions about that. The heat and drought have definitely made for a lousy year for peppers and eggplant, and the pole beans suffered as well. Last year was a banner year for all three.

Grilling eggplant is one of my favorite ways to cook it. In this meatless main dish casserole, grilled eggplant is layered with cheese and a tomato and mushroom sauce and then baked. The leftovers are good frozen – if you have any leftovers!

This recipe makes a great light appetizer or side dish whenever fresh eggplant is available. Avoid older eggplants with dull skin since they tend to be bitter tasting. This recipe is great for miniature eggplants like Fairy Tale, Hansel or Gretel – just slice them in half lengthwise. Larger oval eggplants can be sliced crosswise.

I tell you, nothing says summer like ripe tomatoes! We had the first taste of slicing tomatoes yesterday. These Early Girls and Moretons in the photo below aren’t real big, but they sure were tasty.
