The classic wilted spinach salad is made with hot bacon drippings. This lightened version uses orange marmalade, balsamic vinegar and olive oil for a hot dressing. Serve with a whole wheat roll or bread for a great light lunch or dinner. With the tangy dressing, you won’t even miss the bacon!

These rolls are lighter and less dense than the original recipe, due to the addition of vital wheat gluten to give them more rise. I knead the dough with a Kitchenaid mixer, using the dough hook. It only takes about 5 minutes of machine-kneading to produce a nice elastic dough.

This recipe is a good way to use up overripe bananas. You can even use bananas which have been frozen. Just thaw them out first and then mash them. The white whole wheat flour makes the muffins more nutritious, and is a great way to add whole grains to your diet.
